Cocktails like the Castaway, which combines manzanilla sherry, salted Velvet Falernum, and green Chartreuse, are prime examples of Stoa’s distinctive approach of creating a big impression with fewer ingredients. Instead, Kehagiaras finds the ideal equilibrium by using his in-depth knowledge of his backbar and his researched experience. It’s a technique that makes a cocktail with just three ingredients appear more complex than it actually is, according to SFGate. Stoa’s menu has a carefully chosen blend of Kehagiaras’ best hits from previous endeavors as well as brand-new treats.
